When the world is bitterly cold and there isn't a soul in sight, is there anything better than lingering over a scalding hot bowl of meat, pork skins and white beans, otherwise better known as the French Cassoulet. This is not a question. It is rather more of a statement and an affirmative one at that.

I have so many things to say about this deeply satisfying and warm cassoulet After flying across the world to get to Washington, D.C. so I could review the newly revamped Sofitel D.C., this dish was exactly what I needed to have a filling, restful sleep.
